Basically, they are fried in oil. Vegetable oil. The older generation may still be using lard though. Actually, a lot of people will poach an egg in water because it looks like a fried egg, but without the fat. We would use butter for scrambled eggs. Actually, the most popular way to eat eggs over here is boiled.
